Make This Idiot-Proof Snack In 10 Minutes or Less

A friend of mine was having some girls over to hang by her pool. I wanted to bring something to munch on, but was having some trouble coming up with something creative. After a brief deep dive online, I discovered Australian YouTube sensation Sarah’s Day. Her channel is full of food and fitness tips, including this crazy easy watermelon snack. I’ll break it down:

  • Chopped Watermelon
  • Generous Squeeze of Lemon
  • Chopped Mint Leaves
  • Passionfruit

Simple and sophisticated – just what I was looking for. My local market didn’t have passionfruit, and I ended up grabbing basil leaves instead of mint. I was a little bummed about that, but it still tastes great with basil. Adding fresh lemon juice made the melon taste like sour candy!  This recipe was a definite crowd pleaser and is my new go-to summer snack. This could easily be turned into a slushy situation blended up with vodka or tequila…just a thought!

While watermelon is around 90 percent water, it’s also packed with a few key vitamins (A and C), and minerals (potassium and magnesium). It’s an ideal fruit to eat when temperatures rise that can fight free radical damage and aid in the body’s natural detoxification system. Studies have shown it also has a positive effect on relieving muscle soreness, so consider having a few bites of watermelon after an intense workout session. It’s the perfect snack to prep ahead of time; according to World’s Healthiest Foods, cut and chilled fruit can retain its nutritional profile for around six days. Score!
